    Spring cold juice

    We have been travelling, and of course caught a bit of a bug. I'm hoping this will help knock it out of us.

    2 lemons
    1 Valencia orange
    1 naval orange
    3 stalks of fennel
    4 small parsnips
    4 small carrots with greens
    1/2 handful dandelion greens
    2 droppers full of elderberry extract (add after)

    Wash all veggies and fruits thoroughly. Peel oranges and lemons. Juice ten add elderberry.

    Apple parsnip juice

    1 stalk fennel
    4 stalks celery
    2 red apples
    1 green apple
    1 inch ginger cube
    4 parsnips

    Orange fennel juice

    2 big Valencia oranges
    2-4 stalks fennel
    2 large cloves garlic
    2 inch piece of ginger
    4 carrots with greens still attached
    1 apple
    1 handful mixed greens or spinach
    1 lemon
    A dash of vita coco coconut water with pineapple

    Chickpea salad and Red Curry

    15 oz organic chickpeas
    1 inch cube of ginger, minced
    2-4 tbsp Wholly Organic guacamole
    8-10 strawberries, chopped/minced
    2 dashes of sea salt
    1 dash fresh ground pepper
    1 tbsp minced cilantro

    1. Mix and serve


    Thai Red Curry

    1 package Soy Puffs (see picture)
    3/4 can Maesri brand red curry paste
    2 tbsp ginger garlic past
    2 tbsp coconut oil
    1 can coconut milk
    1 c string beans
    Broccoli

    Optional: 1tbsp ground flax seed

    1. Heat ginger and garlic paste and coconut oil over medium heat. Add soy puffs, coconut milk and curry paste. Mix well.

    2. Add veggies and cover. Allow to slightly cuddle until broccoli is tender; 15-20 minutes.

    This turned out REALLY spicy. The curry paste says 1 can of paste to two cans of coconut milk, but that turns out a bit bland to me. Adjust accordingly.

    Peanut Noodles with Kelp

    "In New Zealand and in other areas of the world that Dr. Price visited, he noticed people with cavity-free teeth had consumed large amounts of abalone and some edible kelp. (Too much kelp will overstimulate your thyroid, but a little is nutritious.)"

     

    My littlest is battling early child caries or cavities, NOT from full-term nursing or any nursing, but from weak enamel and genetics, and I am entering into my second pregnancy following this diet:

    Every day, consume the following:


    • 10-12 glasses of fresh water

    • Fruits and veggies: 6-8 servings per day including two leafy greens, one yellow and one orange

    • Whole grains: 2-4 servings

    • Calcium rich foods: 2-4 servings per day

    • Protein foods: eggs, lean meat, fish, chicken, legumes: 2-4 servings per day

    • Flax seeds: 1-2 Tbs ground

    • Multivitamin: We really do not care if you take one because we think the best vitamins come from food. If you do take one, any will do. Look for 400-800 mcg folic acid. Don't take it if they make you sick or constipated: Talk with us about this.


    Eliminate from your diet:


    • All refined sugar

    • All white foods: white bread, rice, flour, sugar, potatoes

    • No more than one glass of fruit juice, preferably orange, per day

    • Hydrogenated or partially hydrogenated vegetable oil

    • Alcohol (An occasional drink is okay)

    • Caffeine: No more than 1 cup per day

    • Nicotine

     

     

     

    So in an effort to cure both of our "ailments" ;), I am looking at dense, nutrient packed recipes that I did not discover the first time around. The first is Wheat Noodles with Peanut Sauce and Kelp. I used a prepackaged kelp with a chili-oil packet, if you happen to find the same packet know that the chili oil has a nice kick in case you are sensitive to spice.

     

    2 packages, probably about 16 oz or 1 pound of Canton Noodles
    3 handfuls cilantro
    7-10 spring onions, chopped
    1 package kelp (I used both the spice and chili oil packet as well)
    2 tbsp sesame oil
    12 ounces Thai peanut sauce

    1. Heat sesame oil over medium heat and add cilantro, spring onions and kelp. Sauté while water boils.

    2. Add peanut sauce mixture to greens mixture and warm over medium/low heat while noodles cook.

    3. Toss sauce and noodles together in a bowl and serve hot or cold.
