Beet greens salad
Monday, July 18, 2011 at 11:13PM Today we took a trip into the country to visit some different farms and farm stands. The really helpful woman at Ticonderoga farms in Loudoun County, VA sold us Egg cucumbers and I couldn't wait to get home and try them! Upon further investigation of this oddlt shaped and colored cucumber, I found out that it is properly called Dragon's Egg Cucumber, and it tastes sweet with a very soft texture. It was perfect for a sald that was already fairly crunchy.

2 handfuls beet greens
1 handful purslane
1 egg cucumber, sliced
1 tomato, chopped
Topped with Greek feta dressing.
Yields 2 salads
The beet greens and purslane were purchased at the DuPont Circle Farmers Market and the egg cucumber and tomatoes were purchased at Ticonderoga Farm.
